1. Materials

2. Blueberry jam: 200 grams of blueberries, 40 grams of caster sugar, 15 ml of lemon juice.
3. Cheese paste: 200 grams of cream cheese, 40 grams of sugar, 150 grams of original yogurt, 30 grams of milk, 10 grams of isinglass powder, 150 grams of whipped cream, and 10 ml of lemon juice.
2. Cheesecake Practice
1. After the biscuits are crushed, add melted butter and mix well, pour into the bottom of the mold to spread evenly, and put it in the refrigerator for later use.
2. Wash the blueberries, wipe dry, add fine sugar and press into a paste. Let stand for 1 hour to allow the sugar and blueberry flavors to fully incorporate. Then turn on a low heat, pour in the lemon juice, and cook while stirring until it thickens.
3. Beat the softened cream cheese and sugar until smooth and without grains, add yogurt and lemon juice and stir well.
4. Add 30 ml of milk to a bowl and heat it in the microwave for about 30 seconds, then add isinglass powder and mix well. Pour into the cream cheese paste and mix well.
5. After whipping the whipped cream to 70%, pour it into the cream cheese paste and mix well.
6. The cream cheese paste is evenly divided into 3 parts, one part is original, one part is added with about 40-50 grams of homemade blueberry jam as the bottom layer, and one part is added with 20 grams of blueberry jam as the middle layer.
7. Take out the refrigerated mold from the refrigerator, pour the dark purple cheese paste first, and put it into the freezer layer of the refrigerator for 25 minutes until it solidifies. Then, remove and pour in the light purple cheese batter and freeze for 25 minutes. Finally, take out and pour in the last layer of original cheese batter, and refrigerate for more than 5 hours until completely solidified.
8. Then take out the mold and add your favorite decoration.
