Nougat

Nougat, also known as protein sugar, is a semi-soft candy made of protein, syrup, nuts and other aerated processing, with more pores visible in the profile, loose structure and meticulous organization. Its English name is nougat, so it is transliterated as "cow rolling", which has nothing to do with cows.

The special raw material of nougat is egg protein, which is a kind of hydrophilic colloid.
