White granulated sugar is processed by marshmallow extractor to make cotton candy. Marshmallow extractor is a machine like a big bowl. The central part of marshmallow extractor is a high-temperature heating chamber. The heat breaks the crystal structure and turns sugar into syrup. The heating chamber of marshmallow extractor has some holes smaller than the size of white granulated sugar particles. When the sugar rotates at high speed in the heating chamber, the centrifugal force ejects the syrup from the small hole to the peripheral wall of marshmallow extractor. Because the solidification speed of liquid matter is related to its volume. The smaller the volume, the faster it solidifies. Therefore, the diameter of the small hole in the heating chamber is often designed to be very small, only 50 microns. The syrup sprayed from the small hole will immediately condense into solid sugar filaments and will not stick together.
